at a black jack table do you have to bet on each and every turn or if you skip a turn you have to wait for the next shuffle. Thanks!

It depends on the rules

Often, in games where the house has a rule against mid shoe entry, if you sit out a hand you must wait for the shuffle.

If there is no rule against mid shoe entry you can sit out and come back whenever you wish.
Since the average blackjack player is an ignorant and superstitious creature, going in and out of hands will get you some grief often. Go out of a hand and everyone loses or come back in and everyone loses you will probably hear some comments. Of course, if everyone wins no one will say anything. Remeber it is your money so you do whatever you want. Blackjack, contrary to what these players will tell you, is not a team sport but is every man for himself (unless you play on a team that shares profit and loss).

Even at tables with NMS, they'll often tolerate sitting out a few hands here and there to answer the phone, etc., but be prepared to wait for the shuffle if you push it.

Don't know about where you've been, but I've seem plenty of instances where a player sits out for a few hands. Sometimes ploppys will bitch, but most don't care. You can always offer to let the complainer play your spot while you'r eout. Even if someone stops playing and stays in the chair I've rarely seen anyone tell them to leave unless another player wants that seat.

And then of course you can leave for restroom breaks, cigarette breaks or just to get some fresh air. Most dealers say 15-20 minutes but I've seen muchlonger before they'll actually move anyone's chips ... even then usually not unless someone asks. OF course you can't count when you're away from the table.
