Does anyone know if online casinos can be counted? Do they play with shoes or do they just call up cards at random?

No you cannot count

Almost all online games are dealt from a single deck that is reshuffled after each hand.

I do not know of a situation at present that allows one to count an online game.

There are other ways of beating online casinos; e.g., I am sure you know about bonus hustling (if not -- learn).

There are a few video camera based games out there that have a live dealer and a shoe. 4 deck pen out of 8. Technically countable but probably not worht it.

Really? Where can I find these games? Do they allow the player to wong in and out at will? I know 4/8 is terrible but with strict wonging(never playing any negative expectation hands), it could be worth it.
