Well for single-zero roulette, without any fancy rules, I'd guess the variance per bet on an even money bet is (18*(1+1/37)^2+19*(-1+1/37)^2)/37=0.9992695.
For a single-number bet, I'd guess (1*(35+1/37)^2+36*(-1+1/37)^2)/37=34.080.
Take the square root to get the standard deviation per bet.
For games like BJ it's pretty hard to figure out and would change with different rule sets. I think I've seen variance of 1.2 to 1.32 or so depending on rules. I'd guess sims are used to figure it out.
