If you ignore the betting-cover stuff and just check out the NBC (no betting-cover) tables such as the one on pages 19 (6-deck) and page 69 (double-deck) you'll see that the following rules of thumb are applicable:

In 6-deck games, adding an extra half-deck doubles SCORE.
In Double-deck games, adding an extra 10 cards doubles SCORE
