I just want to add that the deciding factor for me is the speed of play.
Baccaract is tremendously popular here. There are 15 Bac tables and 3 BJ tables. It is not usual ti have players standing 3 deep around a Bac table and have 20 bets on a round. I have timed the play at an average of 40 rounds per hour. For BJ with 3or 4 players you are looking at about 120 rounds per hour. Hence for Comps it is much better to play Bac.

A past outcome has no effect on future outcomes on random variables.
If the toin was tossed heads 10 times in a row, there is still a 50% chance of it going heads on the 11th toss, this is basic theory learned in junior high.

Mean reversion does take place in financial markets, however this can be explained due to human involvment. (overreaction's and changes in risk aversion)

there is no evidence or reason at all for what you are saying to be taking place
