They base it on how you play your hands at the times they see your game; whether it's basic strategy or not, and betting strategy or flat after win or loss. Sometimes, the PB will walk away and return minutes later to observe the table, and record your skills level. Depending on their software or card, they may record your max bet (that they see). The other info they record: what your wearing, chips you may colored up during shuffle,.
